Veggie Chilli

Who needs a veggie meal idea? Why not try this super one pot colourful dish - packed full of flavour and a range of veggies and beans. A must try for the family!


Ingredients (Serves 6):

1 tin passata

1 tin chickpeas

1 tin butterbeans

1 tin kidney beans

1 tin cannellini beans

1 packet asparagus

1 green pepper

1 red pepper

1 yellow pepper

1 packet baby corn

2 courgettes

1 vegetable stock cube

1 tin boiling water

1 onion

1 tsp cumin powder

1 tsp chilli powder

1 tsp cajun powder


Method:

Fry off the onion with 2tsp of olive oil for 2-3 minutes until cooked. Throw in the peppers, asparagus, baby corn, courgettes and cook for a further 5 minutes. Stir in the cumin, cajun and chilli powder. Added the passata, vegetable stock cube and boiling water and simmer for 10 minutes. Finally add the chickpeas, butterbeans, kidney beans and cannelloni beans and simmer for a further 5-10 mins so everything reduces. If not thick enough stir in 1tsp of cornflour mixed in water and simmer for 2-3 minutes. Place up with your choice or rice, bread, couscous or even eat it alone. Add a sprinkle of cheddar cheese on top and voila!.
