Cocoa Protein Pancakes

A perfect way to start your morning - an easy recipe that you can whizz up the night before.

Ingredients:

Serves 1

1 large banana

1 medium egg

3 egg whites

25g protein powder (vanilla/chocolate)

30g blended desiccated coconut into a powder

1 1/2 tsp cocoa powder

100-150ml water (add little first and mix, making sure mixture is not too runny or not too thick)

2 tsp desiccated coconut

2 tsp coconut oil

2 tbsp Greek yoghurt

handful of blueberries


Method:

Whizz up the banana, egg, egg whites, protein powder, 30g desiccated coconut powder, cocoa powder and water in a blender until smooth. If too thick add more water. Heat a non-stick pan over a medium heat, add the desiccated coconut and toast until golden. Stir half into the batter mixture and save the rest for decoration. Melt the coconut oil in the pan and fry large spoonfuls of the batter for 1 minute, then flip and cook for a further 30 seconds. Repeat until all the batter is used. Stack the pancakes on top of each other and top it with the yoghurt and scatter the remaining desiccated coconut and blueberries.
